Ingredients:
- Idiyappam flour – 1 cup
- Hot water – 2 cup
- Coconut oil – 1tsp + 2 tbslp
- Mustard seeds – ½ tsp
- Cumin seeds – ½ tsp
- Salt – as req
- Mixed diced veggies – 1 cup
- Chopped onion – ¼ cup
- Chopped mixed bell pepper – ¼ cup
- Freshly shredded coconut – ¼ cup
- Freshly grounded cumin-pepper – 2 tsp
Procedure:
Step 1:
In a wide mixing bowl, add idiyappam flour with a tsp of salt. Now add 2 cups of super-hot water (it may vary from flour-flour, depends on the rice age) with a tsp of coconut oil. Mix well until the dough come together. Cover it with a damp cloth.
Step 2:
In an idli steamer, add some water to the steamer bottom. Grease the idli plates/ molds with some oil.Now place the dough into the idiyappam maker and starts squeezing to the greased plates from clockwise direction.
Step 3:
Place the plates into the steamer. Over the top of the plate add the chopped mixed veggies. Steam the veggies along with idiyappams.
Step 4:
Allow it to cook for about 8-10 mins. Cool completely
Step 5:
Separate the idiyappam layers individually and keep aside.
Step 6:
In a medium pan, add some coconut oil, let the oil get hot. Add mustard seeds and cumins, allow it to splutter.
Step 7:
Add the chopped onions, bell pepper/ sweet peppers. Saute for a while, now add the steamed veggies to the mixture.
Step 8:
Now add the idiyappam layer/ sevai to the pan, toss gently. Now add required amount of salt, freshly grounded cumin-pepper and freshly shredded coconut to the mixture.
Toss gently and serve hot.
