Palkova/ koya/ sweetened kova
Ingredients:
- Whole milk – 4 cups
- Granulated sugar – 1.5 cups
- Cardamom powder – a generous pinch
Procedure:
- In a heavy bottomed pan pour the whole milk and bring it to boil in a medium flame.
- Scrap the edges
- Stir constantly to avoid scorching
- Within half an hour or so the milk starts thickening at this point add the sugar keep stirring until the sugar dissolves completely
- It will take some time to get the texture need more patience.
- Close the final stage it start leaving the pan edges at this time add generous amount of cardamom powder, if you don’t like the aroma of cardamom and those who want to taste the traditional palkova flavor then skip the cardamom powder
- When it reaches the final stage (able to collect the kova almost) then turn off the flame.
- Allow it to cool, you will get the best palkova. Enjoy with your beloved ones.
Storing Process:
Always use clean and dry box for storing this luscious sweet.
- 2 days – over the counter
- 1 week – keep refrigerate.
UNSWEETENED KOVA:
Use the same procedure skip adding sugar and cardamom powder. Keep refrigerate and you can use for making some delicious sweet with our homemade rich kova.
