One of the healthiest pulses, we south Indians use to have this on our regular diet in terms of medhu-vadai/ idli/ dosai/ uttappam/ bonda/ kali. This is mainly given during pregnancy and puberty to this will strengthen your child pelvic bones and muscles .ulundhu/urad dhal is one of the richest source of protein,vitamin,folic acid, calcium and so on.

It’s none other than our JANGRI, Oh My God… I’m dying for this sweet all the time. We never think of doing this at home. This sweet recipe is inspired from “ORIGINAL-DINDIGUL JELABI IYER KADAI”, very light and tender sweet. You might try this at your home
Ingredient:
- Urad dhal – 1 cup
- Salt – a pinch
- Cooking oil – to deep fry
Sugar Syrup:
- Granulated sugar -1cup
- Water -1/2cup
- Cardamom powder/elaichi- a pinch
Procedure
Step 1:
Soak the urad dhal in a medium bowl for about 4 hours and grind it finely with less amount of water and salt (grinder preferable when compared to mixie for fluffy batter)
Step 2:
Take one clean muslin/ any cotton cloth, put one very small hole and take a handful of grounded urad dhal batter and place over the holed cloth
Step 3:
Meanwhile heat the oil in a frying pan. Once the oil get hot, hold the battered cloth like frosting cone and start squeezing to attain simple mini-jangri shape.
Step 4:
Within a minute the jangri floats up and it’s the sign to flip it and allow it to cook for few more minutes in a medium flame.
Step 5:
Once the sizzle sounds off you can take off the Mini-JANGRIS from the oil and place over the kitchen towel or tissues to take off the excess oil.
Step 6
In between you can start the sugar syrup process .In a medium vessel mix the water and granulated sugar bring it to boil when it reaches the ONE STRING Consistency ,add the cardamom powder to the syrup and turn off the flame now add the lemon juice /lemon salt to avoid the crystallization
Step 7
Add the jangris into the hot sugar syrup, immerse immediately with the ladle and once it will absorb the sugar syrup, take off the jangris from the syrup and serve hot.
The crispy outside and syrupy inside mmmmmmmmm………… just delicious. NO color, NO added preservatives, you must experience this at least once in your life time.
