Mushroom Soup

MUSHROOM SOUP

Soup by itself is a healthy and filling starter; when it comes to mushroom, we have numerous varieties that we can make. Some of the benefits of mushrooms are

  • Mushrooms are great source of fiber, protein and vitamins; especially vitamin B and C
  • They are source of powerful anti-oxidants
  • And they are also rich in calcium

Ingredient

  • Mushrooms                – 1/2 cup
  • Garlic                             – 2 pods(finely chopped)
  • Shallot/small onion – 1 no(finely chopped)
  • Butter                            – 1 tsp
  • Whole milk                  – 1 cup
  • Corn flour                    – 1 tsp (optional)
  • Pepper powder         – as req
  • Salt                                  – as req

Procedure

  • Step 1: Wash, clean and cut the mushrooms finely and keep aside
  • Step 2: In a medium sauce pan, add a tsp of butter and let it melt; then add finely chopped garlic and shallots and sauté for a min or so
  • Step 3: Now add the finely chopped mushrooms along with a tsp of salt and sauté for about 5-8 mins or until it shrinks well; then add a cup of warm milk and bring it to boil. If you are using corn flour as thickening agent, add at this point. Do not add corn flour directly, instead add a tsp of corn flour into a 2-3 tblsp of water, then stir well and then pour the corn flour mixture to the soup
  • Step 4: Let it cook for another 5 mins-stir constantly, now sprinkle some pepper powder as per your taste. Within few mins you will get the creamy consistency; then your soup is ready to serve.

 NOTE/TIP

  • Serve with a piece of French bread to enhance the flavor
  • You can give this soup for your baby only after a year old; mushroom and whole milk may cause indigestion. Pl take advice from your pediatrician.
