Dragon Veggie Soup

Most appealing soup that you would have ever had; silky, creamy and a very healthy soup for your little ones.  Even elders can try this; this soup is my mom’s favorite as well. A complete healthy and nutritional combo, you can serve this soup with a side of French bread. Try this.

Ingredients

  • Beetroot         – 1/4 cup
  • Carrot              – 1/4 cup
  • potato              – 1/4 cup
  • small onion    – 2 (small)
  • Garlic                – 2 pods (small)
  • Cumin seeds – 1 tsp
  • Salt                     – a pinch
  • water                – as req

Procedure

  • Peel, wash and cut the veggies – Beetroot, Carrot, Potato
  • In a medium sauce pan, add all the ingredients except salt, along with a cup of water; bring it to boil
  • Once the veggies turned mushy, then add salt
  • When the soup mixture cools to room temperature, grind finely or mash the veggies and strain it

NOTE/ TIP

  • When I serve this soup for babies, I usually puree it finely and strain it well.
  • You can mix this soup to your baby morning or lunch meal too.
  • Adding fresh cream or milk is purely optional; this will make the soup more creamy and rich
  • Cumin and garlic in the soup is good for your baby’s little tummy and is easy to digest
  • If you added more water for boiling the veggies, don’t worry, save the excess water and use it later for any curry or gravy.
