RED VELVET CAKE

RED VELVET CAKE:

Being an Indian especially from down south for me it’s very new about red velvet cake. I’m not that much eager to know about this cake, until my daughter’s first birthday. My hubby insisted me all the time to taste this cake, one good day i got a chance to taste this southern classic Red-Velvet Cake, it’s quiet delicious. I do watch anna olson’s baking series all the time I got an idea about this cake for an unique variation and really it turned out very well. Here is the recipe.

Ingredients:

Dry Ingredient

  • All-purpose flour                                      –          2 ½ cups
  • Unsweetened cocoa powder                 –          1/3 cup
  • Granulated sugar                                       –          1 ½ cups
  • Baking powder                                           –          1 tsp
  • Salt                                                                 –          1 tsp

Wet Ingredient:

  • Egg                                                                 –          2 no (large)
  • Canola/ mild cooking oil                          –          1 ½ cup
  • Buttermilk                                                   –          ½ cup
  • Beetroot Puree (blanched)                      –          ½ cup
  • Red food color                                            –          1 tblsp
  • Vanilla extract                                            –          1tsp

Cream cheese Frosting

  • Cream cheese                                              –          4 cups
  • Confectionery/ powdered sugar       –          4 cups
  • Unsalted butter                                         –          1 cup
  • Vanilla extract                                            –          1 tsp

For Greasing

  • Softened butter                                          –          1 tblsp
  • Cocoa powder                                            –          2 tblsp

Procedure:

Step 1:

Pre-heat the oven to 350 degree F and grease three 9 inch pans (I used one 8 inch round pan, 6 inch round pan and one 4 inch round pan for celebration purpose). Keep aside

Step 2:

In a wide mixing bowl add all the dry ingredient and mix well, take a separate bowl add all the wet ingredient and beat on medium high speed for 3-4 mins and add the dry ingredient mixture slowly and whisk together

Step 3:

Pour the batter over the greased pans and bake it for 30-35 mins or until toothpick inserted into the center comes out clean. Then cool completely

Step 4:

Meanwhile prepare the cream cheese frosting, in a wide mixing bowl add vanilla extract, softened butter and cream cheese whisk together and slowly increase the speed, by that time add sugar slowly to the mixture only half a cup at a time and beat well until light and fluffy

Step 5:

Place a cake stand for arranging the cake layer

  • Place one layer and spread a spatula full of cream cheese frosting and spread from center to edges
  • Repeat the process with remaining layers
  • Topped with some fresh strawberries or raspberries for visual treat.

NOTE/ TIP:

  • For baking a cake always grease the bottom of the pan with butter and flour.
  • If it is chocolate base cake then grease the bottom of the pan with butter and cocoa powder (expert technique)
  • Always use a parchment/ butter paper for baking for take out the sponge cakes easily.
  • Always use buttermilk instead of water for best texture
  • Do not over bake your cake at any cause
  • Always use a wide mixing bowl for mixing the ingredients
  • Always frost from center to edges and finish from edges to center
  • Always tap the battered pan before step into the oven to take out the air bubbles
  • Whenever you plan to do a cake/ frosting or muffin keep your butter and eggs at room temperature
  • Always keep your mixing bowl into the fridge which is going to use for making frosting
