Creamy Broccoli Soup
Greeny, creamy and a very healthy soup.
Ingredients
- Broccoli – 1/4 cup
- Butter – 1 tsp
- Shallot/small onion – 2 (small finely chopped)
- Garlic – 2 pods (small finely chopped)
- Cumin seeds – 1 tsp
- Whole Milk – 1 cup
- Salt – a pinch
- water – as req
Procedure
- Put the broccoli florets in a super-hot water for a minute or so in order to kill the germs
- Heat the kadai/pan, put about a tsp of butter
- Once the butter is melted then add the cumin seeds let it splutter and add the finely chopped garlic and shallot/small onion and sauté for a minute
- Later add the broccoli florets and saute for about 2 mins
- Add about a cup of room temperature boiled milk to the broccoli mixture; add salt to taste
- Bring it boil until the florets gets tender
- Let it be cool down for a while
- Grind well using a small mixie jar
- For silky and creamy soup, strain the soup using strainer.
NOTE/ TIP
- Pepper can be added; its purely optional and you can add at the very end stage
