PAAL KOZHUKATTAI/MILK DUMPLINGS
Paal Kozhukattai a typical south-indian sweet. This is a very unique sweet and it taste just amazing.we have few varaitions over the same recipe but here i have shared you the most common and traditional way of making this paal kozhukattai.One of my favourite, since from my childhood. I still remember that my mom always surprise me with this sweet(yummy memory). Though my hubby is not a great fan of this, still im doing at least once in month. For this sweet you need more patience and the end result would be just delicious.
Ingredient:
- Rice Flour/Idiyappam flour – 1cup
- Plain milk – ½ cup
- Coconut milk – ½ cup
- Water – 1 ½ cup
- Granulated sugar – ¾ cup
- Cardamom /elaichi powder – a generous pinch
- Salt – a pinch
- Coconut oil – 2 tblsp
Procedure:
Step 1:
In a large mixing bowl mix the rice/idiyappam flour with a cup of water along with a pinch of salt
Step 2:
Take a heavy bottomed vessel pour the flour mixture and Stir constantly to avoid lumps formation,within few mins you can see the batter turned doughy texture
Step 3:
Now you get the almost cooked dough, add 1-2 tsp of coconut oil and knead for a while,the dough should be non-sticky and you can make the kozhukattai balls out of this
Step 4:
Always keep covered the dough,you can make the balls of desired size or about an inch thick you can make it.
Step 5:
In a heavy bottomed vessel pour the plain milk with half a cup of water-bring it to boil,once the milk gets boiled add the lil kozhukattai/dumplings into the milk
Step 6:
Within 4-5 mins you can able to see the dumpling/kozhukattai’s floats on the top of the vessel,now you can add the sugar
Step 6:
Once the sugar dissolves completely add the coconut milk and turn off the flame.sprinkle a generous pinch of cardamom/elaichi powder and serve warm.
NOTE:
- You can replace jaggery syurp instead of granulated sugar
- You can dissolve 2-3 uncooked dumpling/kozhukattai/balls in a tblsp of water and pour it at the end stage.this can act as a thickening agent.
- You can add grated coconut for more texture
