KESAR-PISTA KOVA:

Kesar-Pista Kova sounds unusal?  this is not our traditional sweet but the base of the sweet is our TRADITIONAL PAAL KOVA. my hubby is a DIE-HARD fan of this Paal kova.I live in  America’s Dairyland , one of the nation’s leading Dairy Producers. when compared to other places we get a fresh and super-creamy whole milk. I got a chance of experiencing the deliciousness of the milk and cheese. wherever we are, our food taste and culture are inbuilt. so that makes me to use the fresh-creamy whole milk into Paalkova. I use to make this very often, of course we got a chance of different varieties of  high quality nuts.In my kitchen counter i always have minimum of 2-3 dry nuts especially Pistachios for my lil one. one more Key Ingredient Saffron/ Kesar/ Kunkuma Poo initally i use this very occasionally for some sweets, during pregnancy onwards i use to buy on my regular grocery shopping. Though i get a super-quality of saffron but i will use it very carefully. plenty of health benefits hidden in this saffron.

Just imagine about the combination of rich and creamy MILK with some super quality dry nuts and saffron turned into a LUSCIOUS SWEET so called KESAR-PISTA KOVA.

Ingredient

  • Whole Milk – 2 cups
  • Sugar – 1 cup
  • Saffron – 10 strands
  • Pistachios – 15nos (finely chopped)
  • Cardamom powder – a generous pinch

 

Procedure:

Step 1:

In a heavy bottomed vessel pour the milk and bring it to boil, now add the sugar and saffron strands

Step 2:

Stir constantly to avoid scorching on a medium flame

Step 3:

After 20-25 mins you can see the formation of malai on the sides of the pan,scrap the edges often

Step 4:

It will take few more time to attain the exact consistency, by then add the finely chopped pistachios along with a generous pinch of cardamom powder.

Step 5:

On the final stage the milk solids leave the sides of the pan and you able to get a semi-solid creamy, rich kova. Serve hot or cool completely and refrigerate in a clean –air tight container and serve the cold rich KESAR PISTA KOVA.

NOTE:

  • you can add grounded -pistachio powder instead of finely chopped nuts
  • you can add any other nuts like BADAM/ CASHEWS
  • adding saffron on the initial stage helps to influence the saffron flavor and color.
