Chocolate Mousse Cake


For Chocolate sponge cake

For chocolate Mousse:

  • Dark chocolate – ¾ cup
  • Gelatin powder (unflavored) – 2 tsp
  • Water – 2 tblsp (room temperature)
  • Heavy whipping cream/ fresh cream – 1 ½ cup

For chocolate Glaze:

  • Dark cocoa powder – ½ cup
  • Water – 1/3 cup (room temperature)
  • Granulated sugar – ¾ cup
  • Gelatin powder (unflavored) – 1 ½ tblsp
  • Water – ¼ cup (room temperature)
  • Heavy whipping cream/ fresh cream – ½ cup



  • Prepare the chocolate sponge cake and cool completely

  • prepare the mousse cake pan (adjustable pan; ref pic) and place the pan over the tray lined with parchment paper which helps to hold the bottom firmly

  • prepare the mousse
    • In a small sauce pan, heat about ½ a cup of heavy whipping cream/fresh cream and pour it over the ¾ cup of dark chocolate and leave it for about 2-3 mins; mix well without any lumps; you will get a smooth chocolate ganache
    • Dissolve about 2 tsp of unflavored gelatin powder with 2 tblsp of room temperature water and allow it to bloom (it takes approx 2-3 mins) and mix it with the prepared hot chocolate ganache( ref pic)
    • In a wide mixing bowl, add about a cup of heavy whipping cream/ fresh cream and beat well using hand mixer/stand mixer
    • Now mix the room temperature chocolate ganache into the whipping cream (ref pic) and mix well (ref pic)

  • Prepare the mousse cake
    • Place the chocolate sponge cake into the prepared mousse cake tin (ref pic)
    • Pour the chocolate mousse into the cake gently about 3 inches height, spread it evenly and cover the top of the mousse with a plastic wrap (ref pic); refrigerate overnight or upto 6 hours

  • Prepare chocolate glaze
    • In a sauce pan add, unflavored gelatin powder, granulated sugar, dark cocoa powder, water, heavy whipping cream; mix well without any lumps (ref pic) and cook it under medium –low flame for about 2-3 mins or it starts bubbling
      • Cool to room temperature and keep aside
  • Prepare the chocolate Mousse cake with chocolate Glaze
    • Remove the chilled mousse cake mould and place it over any tall bowl(upside down; ref pic)
    • Pour the room temperature chocolate glaze over the cold mousse cake and decorate as you desire
  • The super chocolaty, silky smooth, Luscious “CHOCOLATE MOUSSE CAKE” is ready to serve.
