//Pineapple-Raspberry Fusion//
Pineapple –Raspberry curry/Pachadi
Onam Sadya Special
Ingredients:
- Pineapple – ½ cup (diced)
- Raspberry – ¼ cup
- Water – ½ cup
- Jaggery powder – ½ cup
- Salt – ¼ tsp
- Plain red chili powder – 1 tsp
Tempering:
- Coconut oil – 2 tsp
- Mustard seeds – 1 tsp
- Curry leaves – few
Procedure:
- Add ½ a cup of water in a pan and boil the pineapple and raspberry together until it gets done
- Now add about ½ cup of jaggery powder along with salt and plain red chili powder (ref pic), mix well and cook under low flame for about 3-4 mins under medium flame and turn off the flame
- Heat about 2 tsp of coconut oil in a pan and add the mustard seeds, allow it to splutter and add the curry leaves; pour the hot mixture into the pachadi/curry
- The super tasty, sweet-spicy, delicious “MADHURA CURRY/PINEAPPLE PACHADI” is ready to serve
NOTE/TIP:
- A very special dish that served on ONAM-SADYA
- Traditionally we use grapes and bananas, I don’t have grapes and bananas at home so I tried with raspberry and it turned out very tasty.
