Pineapple Cream cheese Cake

Ingredients:

For Vanilla Sponge Cake

For Pineapple Puree

  • crushed pineapple – 2 cups
  • Sugar – 1 cup
  • Lime juice – 1 tblsp

For Pineapple Cream cheese Frosting

  • Cream cheese – 1 cup
  • Heavy whipping cream – 1 cup
  • Confectionary sugar – ½ cup
  • Pineapple puree – ½ cup

For sugar syrup:

  • Sugar – ¼ cup
  • Water – ½ cup

Procedure:

  1. For Pineapple Puree
  • Add the crushed/grounded pineapple along with sugar (ref pic) in a sauce pan; cook it until it reaches thick jam like consistency, turn off the heat and add the lime juice and mix well; cool completely

  1. For Pineapple Cream Cheese Frosting:
  • In a mixer bowl, add the cold cream cheese along with confectionery sugar and beat well using hand/ stand mixer until it turns creamy (ref pic)
  • Now add about a cup of fresh cream into the cream cheese mixture (ref pic); beat along with cream cheese until it turns super soft creamy consistency (ref pic)
  • Add the pineapple puree into the cream cheese cream and mix well (ref pic)
  • The luscious, super tasty and creamy “PINEAPPLE CREAM CHEESE” frosting is ready

         

  1. For Sugar Syrup
  • Mix the water and sugar in a sauce pan and bring it to boil; it doesn’t require any string consistency, just the sugar dissolves completely turn off the flame.
  • Cool completely

CAKE ASSEMBLY

  • Cut the cake into 3 equal portions (ref pic)

  • Place one portion on the bottom of the cake stand and apply the sugar syrup with any baking brush
  • Add about a tblsp of pineapple puree into the cake and spread it gently with a spatula

  • Fill about 2 cups of PINEAPPLE CREAM CHEESE FROSTING into a piping bag and cut the TIP of the piping bag and keep aside
  • Squeeze the frosting equally onto the cake as required (ref pic) and spread it using a spatula

  • Repeat the same process for the remaining cake portions (ref pic)

  • Apply a thin layer of the frosting on the outer layer of the cake called “CRUMB COAT” (ref pic)

  • Refrigerate the crumb coated cake until the frosting is set
  • After that apply the required amount of frosting over the crumb coated cake and decorate the cake as you wish
  • The simple, super tasty and spongy “VANILLA CAKE with PINEAPPLE CREAMCHEESE Frosting” is ready; refrigerate at least for 2 hours before serve

NOTES/TIP:

  • You can use any kind of puree (raspberry/strawberry/blueberry) instead of pineapple
  • Adding sugar syrup will enhance the cake texture and flavor
