Sweet Corn Masala Vadai

Ingredients:

  • Split channa dhal – 1/3 cup
  • Sweet corn – 1 no
  • Garlic – 3 cloves
  • Fennel seeds – 1 tsp
  • Dry red chili – 1-2 nos
  • Salt – to taste
  • Curry leaves – few
  • Onion – ½ cup (finely chopped)
  • Rice flour – 2 tblsp
  • Cooking oil – to deep fry

Procedure:

  • Wash and soak the split channa dhal for about 2 hours
  • Separate the corn kernels and pulse it in a mixie jar and transfer it into a mixing bowl (ref pic)

  • In the same mixie jar, add the soaked channa dhal, dry red chili, garlic cloves, fennel seeds along with some salt and grind it coarsely and transfer it into the same bowl

  • Add the finely chopped onions, curry leaves and 2 tblsp of plain rice flour (ref pic) and mix well

  • Heat some oil in a pan, take a lemon size ball of vadai mixture and press it gently in between your palm and drop it into the hot oil gently
  • Cook it for about 2-3 mins on each and transfer it into a paper towel lined plate and repeat the same process for the remaining vadai mixture

  • The super tasty and crunchy snacky “SWEET CORN MASALA VADAI” is ready to serve; serve hot

 

NOTES/TIP:

  • Adding rice flour will act as a binding agent; if you are using the whole sweet corn kernels, then you don’t need to add the rice flour
  • Using this masala vadai, you can make vada curry or urundai kuzhambu; it will taste so delicious
