Karunai Kizhangu Varuval

ELEPHANT FOOT YAM FRY

Ingredients:

  • Diced yam – 1 cup
  • Ginger-garlic paste – 2 tsp
  • Turmeric powder – 1 tsp
  • Plain red chili powder – 1 tsp
  • Sambar powder – 1 tblsp
  • Fennel seed powder – 1 tsp
  • Asafetida – ½ tsp
  • Coconut oil – 2 tblsp
  • Cooking oil – 1 tblsp
  • Salt – to taste
  • Water – as req
  • Curry leaves – few

Procedure:

  • Wash and clean the YAM and cut into small pieces; par boil the YAM with ½ tsp of turmeric powder and some salt; filter out the water and transfer the par boiled YAM into a bowl
  • Now add the ginger-garlic paste, ½ tsp of turmeric powder, plain red chili powder, sambar powder, fennel seed powder, asafetida with some salt and coconut oil
  • Finally add some fresh curry leaves into the YAM mixture and mix well (ref pic)

  • Heat a tblsp of cooking oil in a pan and add the marinated YAM and cook it until it gets done (approx 10 mins under medium flame)
  • The super tasty, crunchy “KARUNAI KIZHANGU VARUVAL” is ready to serve
