ELEPHANT FOOT YAM FRY
Ingredients:
- Diced yam – 1 cup
- Ginger-garlic paste – 2 tsp
- Turmeric powder – 1 tsp
- Plain red chili powder – 1 tsp
- Sambar powder – 1 tblsp
- Fennel seed powder – 1 tsp
- Asafetida – ½ tsp
- Coconut oil – 2 tblsp
- Cooking oil – 1 tblsp
- Salt – to taste
- Water – as req
- Curry leaves – few
Procedure:
- Wash and clean the YAM and cut into small pieces; par boil the YAM with ½ tsp of turmeric powder and some salt; filter out the water and transfer the par boiled YAM into a bowl
- Now add the ginger-garlic paste, ½ tsp of turmeric powder, plain red chili powder, sambar powder, fennel seed powder, asafetida with some salt and coconut oil
- Finally add some fresh curry leaves into the YAM mixture and mix well (ref pic)
- Heat a tblsp of cooking oil in a pan and add the marinated YAM and cook it until it gets done (approx 10 mins under medium flame)
- The super tasty, crunchy “KARUNAI KIZHANGU VARUVAL” is ready to serve
