Cracked Wheat Dosa

Ingredients:

  • Cracked wheat/ broken wheat – ½ cup
  • Raw rice – ¼ cup
  • Salt – to taste
  • Gingelly oil – as req
  • Water – as req
  • Onion – 1 (medium-finely chopped)
  • Curry leaves – 1 sprig (finely chopped)
  • Cumin seeds – 1 tsp
  • Crushed black pepper – 1 tsp
  • Asafetida – ½ tsp
  • Ginger – 1 tsp (finely chopped)

Procedure:

  • Wash and soak the rice and cracked wheat for about 5-6 hours (ref pic)

  • Grind it into a coarse paste (ref pic) with little water

  • Later add finely chopped onion, curry leaves, ginger, cumin seeds, crushed black pepper, asafetida along with required amount of salt and water (ref pic)

  • The consistency should be runny/ watery
  • Heat a dosa pan and grease it with some gingelly oil, keep the flame on high while pouring the dosa mixture and turn down the flame to medium-low to cook uncovered for about a 2 mins (ref pic)

  • The healthy, lacy and tasty “CRACKED WHEAT DOSA” is ready to serve

NOTES/TIP:

  • Adding onion, ginger, curry leaves are totally optional
  • The dosa batter consistency should be watery otherwise the dosa turned like adai
  • No need to ferment the batter
