Candy Birthday Cake

Ingredients:

  • All-purpose flour – 1 cup +2/3 cup
  • Granulated sugar – 1 cup
  • Baking powder – 1 tsp
  • Baking soda – ¼ tsp
  • Salt – a pinch
  • Half melted butter – ½ cup
  • Canola oil/ any mild cooking oil – ¼ cup
  • Buttermilk/ sour cream – ½ cup
  • Egg – 2 nos
  • Vanilla essence – 2 tsp
  • Strawberry puree – ½ cup
  • Red food gel color – as req (for icing decoration)

American Vanilla Buttercream:

  • Room temperature unsalted butter – 2 cups
  • Confectionary sugar – 5-6 cups
  • Whole milk – 2 tblsp
  • Vanilla essence – 2 tsp

 

Decoration:

  • Strawberry candy – as req
  • Pink lollipops – as req
  • Pink sour gummy bear – as req

Procedure:

  • Pre heat the oven to 350˚F
  • Grease two 8 inch round pans with butter and dust it with some flour and place the parchment paper over it.
  • In a mixing bowl, add the egg, butter milk, half melted butter, canola oil and vanilla essence and mix well
  • Over the egg mixture; Sieve the all-purpose flour, baking soda, baking powder, salt and sugar. Mix well using a whisk or an electric beater.
  • To the final stage add the strawberry puree and fold it gently into the batter.
  • Now pour the batter equally into the greased pans and bake it for 35-40 mins or until insert a toothpick in the center of the cake comes out clean.
  • Cool completely and start making the vanilla buttercream

Vanilla Buttercream:

  • Add the room temperature softened butter and beat it until light and fluffy; between add the confectionary sugar into two batches.
  • Towards the end, add 2 tblsp of milk and vanilla essence and mix well.

Cake frosting:

  • Place the 1st layer of the cake in the cake stand and add a dollop of the buttercream in the center of the cake and spread with a spatula (always smooth from center to the edges)
  • Repeat the same process to the remaining cake layers and finally roughly coat the cake with the buttercream and refrigerate it for about 30 mins.
  • Now frost the cake with the remaining buttercream and smooth it with bench scrapper and refrigerate it for another 20 mins.
  • Using your favorite tip, pipe the cake top and brush the bottom sides with the red gel food color as desired.
  • Now decorate more with some strawberry chew candies, lollipops and sour gummies.
  • The simple, attractive and tasty “CANDY BIRTHDAY cake” is ready for the party.

NOTE/TIP:

  • For any buttercream cake, keep it in the room temperature at least 2 hours before the party time.
  • You can use more decorative items like M&M candies, sugar sprinkles and more
  • You can add some more strawberry puree into the buttercream for more strawberry flavor.
