Medhu Pakoda

Ingredients:

  • Besan flour/ kadalaimavu – ½ cup (heaped)
  • Rice flour – ¼ cup
  • Chopped onions/ shallot – ¼ cup
  • Chopped chilies – 2 nos (medium)
  • Chopped curry leaves – 1 tblsp
  • Grated ginger – 1 tsp
  • Roasted cumin powder – ½ tsp
  • Asafetida – ½ tsp
  • Baking soda – a pinch
  • Salt – to taste
  • Water – as req
  • Cooking oil – to deep fry

Procedure:

  • Heat some oil to deep fry.
  • In a mixing bowl, add besan flour, rice flour, salt, chopped onions, curry leaves, green chilies, grated ginger, roasted cumin powder, asafetida and a pinch of baking soda. Mix together and add water little by little until you get the thick batter consistency.
  • Now drop the pakodas evenly and allow it cook for about a min or so and flip it gently. Once the sizzle sounds off, take the soft and crispy pakodas from the oil and place over in the paper towel/ tissue.
  • The pakodas are soft in the center and crisp on the outer side. A perfect snack for the winter season.
  • The light and fluffy “MEDHU PAKODA” is ready to serve.
