//Kumkuma poo- javvarisi Payasam//
Ingredients:
- Sabudana – ¼ cup
- Saffron – few strands
- Granulated sugar – ¼- ½ cup
- Chopped Cashews – 1 tsp
- Raisins/ dry grapes – 1 tsp
- Whole milk – ½ -3/4 cup
- Water – as req
- Salt – a pinch
- Ghee/ clarified butter – 1 tsp
- Cardamom powder – a generous pinch
Procedure:
- Boil the whole milk and add few saffron strands into the hot milk and cool to room temperature.
- Wash and soak the sabudana for about 30 mins and add required amount of water to cook and cook it under medium-low flame, stir often.
- Within 3-5 min the sabudana turns glossy, now add the sugar and a pinch of salt into the mixture and stir well. Bring it to boil until the sugar dissolves completely
- Now add ¾ cup of room temperature milk into the payasam and add a generous pinch of cardamom powder and turn off the flame.
- In a small pan, heat about a tsp of ghee and add the raisins and chopped cashews and saute it for a while and pour the mixture into the payasam.
- The yummy-saffrony-glossy “SABUDANA-SAFFRON”Payasam is ready to serve.
