Thaen Mittai/ Then Mittai/Honey Candy:

Ingredients:

  • Idli rice – 1 cup
  • Urad dhal – ¼ cup
  • Baking soda – ¼ tsp
  • Salt – a pinch
  • Food color – orange ( 5-6 drops)
  • Canola oil – to deep fry

Sugar Syrup:

  • Granulated sugar – 1.5 cup
  • Water – ½ cup
  • Cardamom powder – ¼ tsp

Procedure:

  • Soak the rice and urad dhal for about 4 hours. Grind it into fine paste and transfer into a mixing bowl.
  • In a sauce pan, add sugar and water. Bring it to boil until it reaches ½ string consistency. Turn off the flame and add ¼ tsp of cardamom powder and keep aside.
  • In a frying pan, add required amount of oil to deep fry.
  • Meanwhile, add food color, salt and baking soda to the candy batter.
  • Take about an inch size doughy-candy batter and drop it gently into the hot oil, repeat the same process to the remaining batter. Do not over crowd the pan.
  • Within few seconds it will puff up and floats in the oil. Stir occasionally until the sizzle sounds off. Take the fried item and drop it directly to the sugar syrup.
  • Allow it to absorb the syrup and transfer it into a plate. Let it dry and store it in an air tight container.
  • Enjoy the super syrupy “Thaen Mittai/Honey Candy” and cherish your school day memories.
