Okra/ vendaikkai/ bindhi masala. Easy and tasty semi-dry recipe, one pot dish.
It’s a wired combination of okra and curd. But it works pretty well.
Ingredients:
- Okra – 1 cup (sliced)
- Turmeric powder – ½ tsp
- Red chili powder – 1 tsp
- Cumin powder – ½ tsp
- Fennel powder – ½ tsp
- Garam masala – ½ tsp
- Curd – ¼ cup
- Cooking oil – 2 tblsp
- Water – ¼ cup
- Salt – as req
Procedure:
- In a pan add all the ingredients except water.
- Allow it to roast for about 5-7 mins
- Once the okras are half-way done add some water and bring it to boil
- Cover with a lid
- Within few mins the oil starts ooze out to the edges of the pan
- Time to turn off the flame and enjoy with some hot chapathi / cup of rice.
NOTE/ TIP:
- If you want to add some GG (giner-garlic) paste, then add about a tsp or so.
- If you want this little more dry, then allow it to cook in a low flame for few more mins
