One Pot Okra

Okra/ vendaikkai/ bindhi masala. Easy and tasty semi-dry recipe, one pot dish.

It’s a wired combination of okra and curd. But it works pretty well.

Ingredients:

  • Okra              –          1 cup (sliced)
  • Turmeric powder – ½ tsp
  • Red chili powder – 1 tsp
  • Cumin powder – ½ tsp
  • Fennel powder – ½ tsp
  • Garam masala – ½ tsp
  • Curd – ¼ cup
  • Cooking oil – 2 tblsp
  • Water – ¼ cup
  • Salt – as req

Procedure:

  • In a pan add all the ingredients except water.
  • Allow it to roast for about 5-7 mins
  • Once the okras are half-way done add some water and bring it to boil
  • Cover with a lid
  • Within few mins the oil starts ooze out to the edges of the pan
  • Time to turn off the flame and enjoy with some hot chapathi / cup of rice.

NOTE/ TIP:

  • If you want to add some GG (giner-garlic) paste, then add about a tsp or so.
  • If you want this little more dry, then allow it to cook in a low flame for few more mins
