MURUNGAI KEERAI/ DRUMSTICK LEAVES PORIYAL:

About murungai keerai/drumstick leaves they are rich in fiber and these leaves are known to control the diabetics and improve the glucose tolerance. These leaves are exclusively control the blood cholesterol levels mainly Total cholesterol level and Triglyceride levels.Murungaikeerai/drumstick leaves are rich in anti-oxidants which helps to prevent from diabetic and cardiovascular diseases. It helps to regulate the blood flows that helps to reduce even the menstural cramps too. One of the most recommended greens during pre and post pregnancy.

We have used this drumstick leaves in many ways, but this poriyal is one of the classic down south method. Simple and very tasty recipe

Ingredient:

  • Drumstick leaves                                       –          1 cup
  • Gingelly oil                                                  –          2 tsp
  • Seeragam/cumin seeds                             –          1 tsp
  • Urad dhal                                                     –          1 tsp
  • Dry red chilli                                               –          2 nos
  • Shallots/ small onion                                –          4 nos (finely sliced)
  • Grated coconut                                          –          2 tblsp
  • Salt                                                                 –          as req

Procedure:

Step 1:

Take off the leaves without any strings and wash thoroughly and keep aside

Step 2:

In a medium pan add 2 tsp of gingelly oil, let the oil get hot then add urad dhal and cumin seeds and broken dry chilli, once the cumin seeds get splutter add sliced shallots and saute for a min

Step 3:

Now add the washed drumstick leaves and saute until it shrinks. It takes hardly 3-4 mins. Later add salt as per your taste and finally add grated coconut and turn off the flame.

NOTE/TIP:

  • Do not add water to the poriyal, it spoils the flavor
  • If you are making more than one cup then sprinkle some water at the very end before adding the salt and coconut.
  • Always add salt to the end stage before adding coconut. This is for all greens, because greens are cook quickly and the quantity become small. So add salt as per the quantity to the very end.
