KEZHVARAGU KOOZH

Kezhvaragu/Ragi /Keppai Koozh/Finger millet porridge: (savory version)

One of the most nutritious and healthy cereal. Some of the benefits of kezhvaragu are

  • It is rich in protein
  • It is a good source of minerals which includes calcium, iron, potassium and phosphorous which helps to maintain our bone density and a good health
  • Rich in dietary fiber
  • It helps to control the blood glucose levels (diabetic)
  • These are rich in anti-oxidants which helps to prevent from cancer
  • It reduces the bad cholesterol (Triglyceride) which reduce risk of cardiovascular disease

We have a numerous varieties of  Kezhvaragu/Ragi /Keppai/Finger millet,but this one very unique and healthy recipe especially during summer.Since this cereal rich in iron that helps to improve our HB (Hemoglobin) Level too.

Ingredients

  • Kezhvaragu/ finger millet powder -1/4 cup
  • Water                                                            -1 1/2 cup
  • Salt                                                                    -1 tsp/ as per taste
  • Shallot/small onion                                  – 2 nos(finely chopped)
  • Green chilli                                                          – 1 no(finely chopped)
  • Butter milk/ beaten curd                         – 1 cup or so/ as req

 Procedure

(Old-Fashioned Method I)

Step 1:

In a wide mixing bowl add the Kezhvaragu/Ragi /Keppai mavu/flour with a cup and half of water along with a tsp of salt and mix well without any lumps

Step 2:

Keep the mixture for more than 6-7 hrs for fermenting

Step 3:

Pour the mixture into the heavy bottomed sauce pan and bring it to boil and turn off the flame

Step 4:

Cool completely, add the finely chopped onion and green chilli and butter milk/ beaten curd and mix well. Serve cool and njoy the delicious and luscious of our tradition.

(Old-Fashioned Method -II)

Step 1:

In a wide mixing bowl add the Kezhvaragu/Ragi /Keppai mavu/flour with a cup and half of water along with a tsp of salt and mix well without any lumps

Step 2:

Pour the mixture into the heavy bottomed sauce pan and bring it to boil and turn off the flame

Step 3:

Cool completely now add the finely chopped onion and green chilli and butter milk/ beaten curd and mix well and allow it to ferment atleast for 6-7 hrs

Step 4:              

Serve cool and njoy the delicious and luscious Keppai Koozh of our tradition.
