Badusha is one of the famous south indian sweet,very mild and flaky sweet,even diabetic patients can have this without any guilt.It is similar to Glazed Doughnuts in a different texture.one of my favourite sweet from childhood.

Ingredients:
Dry Ingredients
- Maida/all-purpose flour -2 cup
- Baking soda/cooking soda-1/4 tsp
- Salt -as req
- Sugar -1tsp
Wet Ingredients
- Clarified butter/ghee -1/3 cup
- Canola/vegetable oil/sunflower -2tblsp
- Curd -2tblsp
- Water -as req
- Oil -to deep fry
Sugar Syrup:
- Granulated sugar -1cup
- Water -1/2cup
- Cashews/pistachios/badam-5-10 nos(finely chopped)
- Cardamom powder/elaichi- a pinch
- Lemon juice/lemon salt – 1tblsp
Procedure:
Step 1
Always use a wide bowl for kneading any kind of dough,same as here place a wide bowl add the dry ingredients and keep aside
Step 2
Beat curd,oil along with the melted clarified butter/ghee in a large bowl until blended
Step 3
Now pour the blended wet ingredient to the dry ingredient and knead with your hands it became crumble ,add water little by little until it reaches the soft exact doughy texture.(donot knead very hard).the texture of the dough should be like chapathi dough.allow it to rest atleast for 10-15 mins
Step 4
While the dough is resting you can start the sugar syrup process .In a medium vessel mix the water and granulated sugar bring it to boil when it reaches the ONE STRING Consistency ,add the cardamom powder to the syrup and turn off the flame now add the lemon juice /lemon salt to avoid the crystallization
Step 5
Place a kadai/frying pan and pour some oil for deep frying,side by side you can start making BADUSHAS,divide the dough into equal sized balls and take one by one roll in between your palms and flattened it with your palms and make a dent in the center with your thumb
Step 6
Once the oil get enough hot to drop the badusha,drop one by one and cook them in a medium flame ,donot over dump the kadai/frying pan .give room for frying the badushas when it starts floating up it wil take another 5-7 more mins to cook .finally when the sizzles got mellow down and color attains medium – medium rare brown color.it is ready to take off from oil.
Step 7
Once the badusha take out from the oil, drop them immediately into the hot sugar syrup and let it sit for another 5-8 mins you can take off those glazed badusha’s and garnish them as you wish and our flaky,glazy BADUSHA’s are ready to serve.
