Milagu vadai

Pepper/Milagu/ Anjaneyar kovil vadai:

Ingredients:

  • Urad dhal – ½ cup
  • Whole peppercorns – 1 tsp
  • Rice flour – 1 tsp
  • Hot oil – 1 tsp (optional)
  • Salt – to taste
  • Cooking oil – to deep fry

Procedure:

  • Soak the urad dhal for about half an hour. Drain out the water and grind it coarsely with a tsp of pepper and required amount of salt.
  • Now add a tsp of rice flour and a tsp of hot oil (for more texture) and mix thoroughly.
  • Heat some mild cooking oil/ ghee to deep fry
  • Take one wet cloth or a plastic sheet, apply some oil or water over the paper/cloth.
  • Take a small gooseberry size ball and press it thinly with your fingers and put one hole in the center (ref picture). Repeat the same for the rest of the mixture.

  • Now add the uncooked vadai gently into the hot oil and cook it under very low-medium flame for about a two mins or so, Flip the other side gently and cook it furthermore.

  • Once the sizzle sounds off, take the vadai and drop it over the paper towel to take off any excess oil.
  • Now the crunch, tasty and peppery “Anjaneyar kovil Milagu vadai” is ready to serve.
