Dates and Nuts Roll

Ingredients:

  • Pitted Dates – 1 cup
  • Pista – ½ cup
  • Cashew and almonds – ½ cup
  • Condensed milk – 2 -3 tblsp
  • Cardamom powder – few pinches
  • Poppy seeds – 2 tsp
  • Ghee – 2 tsp

Procedure:

  • Grind the pista in a mixie jar into a fine powder and transfer into a bowl, in the same jar grind the cashew and almonds together into a fine powder and transfer into a separate bowl.
  • Chop the pitted dates and pulse it in the same mixie jar and keep aside
  • Heat a pan and add the poppy seeds, toast it for few seconds and keep aside.
  • In the same pan, add 2 tsp of ghee and sauté the coarsely grounded dates for about 2 mins or until it become softened.
  • Now add about 1 or 2 tblsp of condensed milk into the pista and cashew-almond powder individually along with few pinches of cardamom powder and mix well
  • Knead the pista dough gently with your finger for about a min and starts rolling with your palm about 1 inch thick and keep aside, same way knead the cashew-almond and flattened it about 1 inch thick with the help of rolling pin, now place the pista roll over the cashew-almond spread and roll it tightly.
  • Place the softened dates over a plastic wrap and place the cashew-almond –pista roll over the dates and roll the entire item tightly, now sprinkle the toasted poppy seeds on the clean kitchen counter top roll the dates and nuts roll over it and cover it with a plastic wrap, refrigerate it for about 30 mins before slicing.
  • After 30 mins, slice the dates and nuts roll about 1 inch thick; the healthy, tasty and rich “DATES AND NUTS ROLL” is ready to serve.
