//Marundhu kuzhambu//
Ingredients:
- Small onion/shallots – 5-8 nos (sliced)
- Garlic – 10 nos ( crushed)
- Jaggery – 1 tsp
- Gingelly oil – ¼ cup
- Salt – as req
- Tamarind puree- ½ cup
- Water – 1 cup
Kuzhambu Masala:
- Coriander seeds – 3 tblsp
- Spilt channa dhal – 1 tblsp
- Byadagi Chilli – 5 nos
- Sukku/ dry ginger – 1 inch
- Omam/ carom seeds – 1tsp
- Whole balck peppercorns – 1 tsp
- Cumin seeds – 1 tsp
- Fenugreek seeds – ½ tsp
- Curry leaves – 1 sprig
- Grated coconut – ¼ cup
Procedure:
- Roast the kuzhambu masala in a tsp of gingelly oil, cool completely and grind into a fine paste and keep aside.
- In a heavy bottomed sauce pan/ mud pot add some gingelly oil
- Once the oil get enough hot, add the crushed garlic followed by sliced shallots and sauté it for a while.
- Now add the kuzhambu masala paste, along with salt, water and tamarind puree. Stir well and cover it with a lid. Cook it for about 7-8 mins under medium-high flame
- Reduce the heat and cook further for about 4-5 mins under low flame or until the oil separates.
- Cool completely and store it in a clean and dry glass/ Mason jar for more life.
- The super delicious, healthy and gingery “Omam-Sukku Kuzhambu” is ready to serve. Serve with hot white rice.
NOTE/TIP:
- You can even add any kind of tender veggies into the dish like baby squash, acron squash, baby broadbeans, baby brinjal/ eggplant.
- This kuzhambu is highly recommended on post delivery meal.
