//cumin-pepper rice//
Ingredients:
- Cooked white rice – 2 cups
- Sweet peppers/ bell pepper/ capsicum – 1/3 cup (finely chopped)
- Jeera Milagu podi/cumin-pepper powder – 2 tsp (coarsely)
- Whole pepper – ½ tsp (crushed)
- Canola oil/ mild cooking oil – 2 tblsp
- Peanuts/ cashew – 1 tblsp
- Curry leaves – 1 sprig
- Salt – as req
Procedure:
- Heat some oil in a pan and add cumin seeds, allow it to splutter
- Now add the peanuts/ cashews, sauté it for a while and add the finely chopped sweet peppers along with some fresh curry leaves. Cook it for about 2 mins or so
- Add about 2 tsp of coarsely grounded jeera milagu podi, by then add 2 cups of cooked white rice along with required amount of salt.
- Toss it gently and sprinkle some crushed peppercorns towards the end and turn off the flame.
- The flavorful, tasty and peppery “JEERA-MILAGU Sadam” is ready to serve. Serve hot.
NOTE/TIP:
- The rice should be cooled enough before adding into the mixture, else it turns mushy.
- You can even add chopped onions/ green chili/ finely shredded cabbage for value addition.
