Varagu Arisi/ Kodo Millet Pongal

Ingredients:

  • Varagu arisi – ¾ cup
  • Moong dhal – ¼ cup
  • Water – 3 cups
  • Salt – to taste

Tempering:

  • Finely chopped ginger – 2 tsp
  • Broken cashews – 4-5 nos
  • Finely chopped curry leaves – 1 tblsp
  • Crushed black pepper – 1 ½ tsp
  • Cumin seeds – 2 tsp
  • Ghee/ clarified butter – 2 tsp (heaped)
  • Mild flavor cooking oil – 3-4 tblsp

 

Procedure:

  • Wash the rice and dhal and put it in the pressure cooker, add 3 cups of water and pressure cook it for about 3-4 whistles. Cool completely.
  • Meanwhile, in a small pan heat some oil and ghee. Add the broken cashews allow it roast and turn off the flame and add the finely chopped ginger, curry leaves, crushed black pepper and cumin seeds. Allow it to splutter.
  • Now pour the mixture into the boiled rice and dhal along with some salt. Mix thoroughly.
  • Enjoy the delicious, healthy and super tasty “VARAGU ARISI PONGAL” with some spicy-tangy green chutney.
