Ingredients:
- Diced Boiled potato – 2 cups
- Finely grated coconut – ½ cup
- Plain red chili powder – 1 tsp
- Turmeric powder – ½ tsp
- Chopped coriander leaves – 1 tbslp
- Salt – to taste
- Mild cooking oil – 2-3 tblsp
Procedure:
- In a heavy bottomed pan, heat some cooking oil. Add the diced boiled potatoes and toss it with some salt, turmeric powder and plain red chili powder.
- Roast it under medium flame, until the potatoes turn golden brown in color
- Finally, toss the golden brown potatoes with some finely grated coconuts for about a min or so and add about a tblsp of freshly chopped coriander leaves into coconut-potatoes and turn off the flame.
- Delicious and yummy “Coconut-Potato Fry” is ready to serve.
