Coconut Potato Fry

Ingredients:

  • Diced Boiled potato – 2 cups
  • Finely grated coconut – ½ cup
  • Plain red chili powder – 1 tsp
  • Turmeric powder – ½ tsp
  • Chopped coriander leaves – 1 tbslp
  • Salt – to taste
  • Mild cooking oil – 2-3 tblsp

Procedure:

  • In a heavy bottomed pan, heat some cooking oil. Add the diced boiled potatoes and toss it with some salt, turmeric powder and plain red chili powder.
  • Roast it under medium flame, until the potatoes turn golden brown in color
  • Finally, toss the golden brown potatoes with some finely grated coconuts for about a min or so and add about a tblsp of freshly chopped coriander leaves into coconut-potatoes and turn off the flame.
  • Delicious and yummy “Coconut-Potato Fry” is ready to serve.
