Red Velvet cake mix Muffins

Red Velvet-white Choco Chip muffin:

Ingredients:

Dry ingredient:

Wet Ingredient:

  • Canola oil – ½ cup
  • Room temperature Egg – 2 nos
  • Vanilla essence – 1 tsp
  • Butter milk – ½ cup

 Procedure:

  • Pre heat the oven at 375 degree F.
  • Line some cupcake paper molds in the cupcake pan.
  • In a wide mixing bowl, add a box of red velvet cake mix along with canola oil, vanilla essence and butter milk. Beat under medium speed for about 2 mins, add one egg at a time and beat until it blend together.
  • Add about ¾ cup of white Choco chip to the mixture and gently fold it by using a spatula, save a tblsp of Choco chip for topping.
  • Now pour the cake mixture gently into the cupcake lined pan, you can either use ice cream scoop for even distribution of the mixture. Finally topped the muffins with some saved Choco chip before baking.
  • Bake it for 12-14 mins or until insert a toothpick comes out clean.
  • Enjoy the caky, fluffy “Red Velvet Cake Mix Muffins”.
