Mashed Potato-Drumstick Pulp Curry
Ingredients:
- Drumstick pulp – ½ cup
- Mashed potato – 1 cup
- Coconut oil – 3 tblsp
- Chopped onion – 1 medium size
- Chopped tomato – 1 medium size
- Chopped coriander – 1 tblsp
- Mustard seeds – ½ tsp
- Cumin seeds – ½ tsp
Masala:
- Coriander seeds – 1.5 tblsp
- Split channa dhal – 2 tsp
- Urad dhal – 2 tsp
- Byadgi chilli – 2 no
- Pepper corns – 2 tsp
- Cumin seeds – 1 tsp
- Grated coconut – 2 tblsp
Procedure:
- Steam the drumsticks and take out the pulp alone and keep aside.
- Boil 2 medium potatoes and mash them smoothly and keep aside.
- In a small pan, add a tsp of coconut oil, add split channa dhal, urad dhal, coriander seeds, byadgi chilli, pepper corns, cumin seeds and freshly grated coconut. Saute for about 3-4 mins. Cool completely and grind it smooth fine paste.
- In a heavy bottomed pan, add some coconut oil, add mustard seeds, cumin seeds. Allow it to splutter
- Add the chopped onions, saute until it turns translucent. Add the chopped tomatoes and saute for a while.
- Add the grounded masala to the mixture, saute for about 4-5 mins. Now add the mashed potato and drumstick pulp to the mixture. Sprinkle some water and cook it further more until the oil separates. Turn off the flame and sprinkle some freshly chopped coriander leaves.
- Flavorful, aromatic “PD Curry” is ready to serve.
