Cracked Wheat Payasam

Cracked Wheat/Broken Wheat/godhumai Rava Payasam/ kheer:

Ingredients:

  • Cracked Wheat – 1 cup
  • Grated jaggery – ¾ cup
  • Water – 3 cups
  • Whole milk – 1 cup
  • Cardamom powder – a generous pinch
  • Salt – a pinch
  • Cashews/ raisins – 10-15 nos
  • Ghee/ clarified butter – 1 tsp

Procedure:

  • In a sauce pan, add cracked wheat and water. Bring it to boil
  • Take another pan dissolve the jaggery with some water. Filter out the impurities and keep aside.
  • Now add the jaggery water into the kheer mixture, allow it to blend for another 2-3 mins.
  • Sprinkle a generous pinch of cardamom powder along with a pinch of salt to enhance the kheer taste.
  • Place a small kadai, add a tsp of ghee. Add some chopped cashews and whole raisins into the hot ghee. Roast for a while. Finally add the roasted nuts and dry fruit over the kheer.
  • Turn of the flame and now time to add the room temperature whole milk to the kheer, stir completely and the yummy “CRACKED WHEAT PAYASAM/KHEER” is ready to serve.
