Tri-color Uttappam

Mini tri-color Uttappam/ Indian Pancake:

Mini uttappam, my mom used to make us all the time. I wanted to do some variation over this, so I thought of making tri-color uttappam. This tri-color uttappam is super delicious, healthy, colorful, and easy to grab especially for your special ones, even for your babies. There is no food color in this recipe, try this healthy homemade tri color uttappam and njoy.

Ingredient:

  • Idli batter –        3 cups
  • Beetroot puree (blanched) –        2tblsp
  • Spinach puree (blanched) –        2tblsp
  • Carrot puree (blanched) –        2tblsp
  • Water –        ¼ cup
  • Ghee –        for greasing

Procedure:

Step 1:

Take 3 cups of IDLI BATTER in a medium mixing bowl, add about ¼th cup of water into the batter and mix well.

Step 2:

In a sauce pan blanch beetroot, carrot, and spinach separately and puree it

Step 3:

Add the veggie puree into the idli batter and gently fold the batter donot over beat. In a small mixing bowl add all the tri-color veggie batter and fold the batter gently.

 

Step 4:

      In a pre-heated and greased dosa tawa or cast-iron add about a ladle full of batter and pour in the center and do not spread the batter allow it to cook for few mins.

Later add a tsp of ghee/gingelly oil over and sides of the uttappam and cover with a lid and cook for another 1-2 mins. You will get a soft and colorful uttappam. Serve hot with any sambar or chutney.
