Southern Pancake

SOUTHERN CLASSIC PANCAKE:

A classic down south touch pancake or adai or appam has rich in minerals, iron, protein and fiber. It is a combination of four flours rice, wheat, finger millet and pearl millet flour. A complete diet combo for all especially for your lil one. Here is the recipe

Ingredient:

  • Rice flour –        ¼ cup
  • Whole wheat flour –        ¼ cup
  • Finger millet flour –        ¼ cup
  • Pearl millet –        ¼ cup
  • Jaggery powder –        1/3 cup or as per your taste
  • Salt –        a pinch
  • Cardamom powder –        a generous pinch
  • Baking soda –        ¼ tsp (optional for texture)
  • Water –        as req
  • Ghee roasted dry nuts – 1 tblsp
  • Ghee –        for making pancakes

Procedure:

Step 1:

In a wide mixing bowl add the four flours, ghee roasted dry nuts and salt mix well roughly

Step 2:

Take a glass of water, add about 1/3 cup of jaggery (or according to your taste), stir well and pour the jaggery water into the flour mixture using mesh strainer( to take off the impurities from jaggery powder)

Step 3:

If you want to add baking soda add at this point and let it rest for a while. The batter should not be runny but should be in pourable like uttappam batter (neither too thin nor too thick)

Step 4:

Take a ladle full of batter into the pre-heated greased tawa, spread a little like mini dosa shape or like English pancake shape and add ghee to the sides of the tawa let it cook for 3 mins or so in a medium flame. Later flip it out and cook for 1-2 mins and serve hot or serve with a spoonful of pure honey for your sweet Honey.
