VENDAIKAI PORIYAL:

Vendaikai/ ladies finger/ okra poriyal is the best combination for sambar, even for curd rice. We can have this for chapatti too. Most of the people hesitate to cook this because of its slime nature. But these are loaded with good amount of nutrients. Some of the benefits are

  • Good source of folic acid, vitamin B, vitamin C and calcium
  • Rich in dietary fiber and low in calories
  • It has been suggested to manage the blood sugar type1, type 2 and even for gestational diabetes.

 Ingredient: 

  • Sliced okra                  –       1cup
  • Shallots              –        3 nos (finely chopped)
  • Cumin seeds      –        ¼ tsp
  • Turmeric powder –   ¼ tsp
  • Plain red chili powder – ½ – 1 tsp
  • Fennel powder –        1 tsp
  • Curry leaves      –        1 sprig
  • Cooking oil        –       2 tblsp
  • Salt                      –        as req

 Procedure:

Step 1:

Slice the okra in ¼ inch thick (if it is too thick, then it will take longer to cook), cut the onions finely and keep aside.

In a sheet pan spread the sliced okra to dry before cooking.

Step 2:

In a kadai add about 2 tblsp of cooking oil, once the oil get enough hot add cumin seeds, let it splutter. Add chopped onions with some fresh curry leaves. Saute for a while

Step 3:

Add the sliced okras to the tempering mixture and saute for few mins with required amount of salt in a medium flame. Once you find slime-free okras then add turmeric and red chili powder and saute for few mins in a medium-low flame.

Step 4:

Once the okras are almost done, sprinkle some fennel/ sombu powder and turn off the flame. Serve with rice or chapathi.
