zucchini kootu

Zucchini/ Seemai Suraikai Kootu:

Ingredients:

  • Chopped Zucchini – 4 cups
  • Moong dhal – ½ cup
  • Chopped onion – 1 (medium)
  • Chopped tomato – 1 (medium)
  • Turmeric powder – ½ tsp
  • Asafetida – ½ tsp
  • Salt – to taste

To grind:

  • Grated coconut – ¼ cup
  • Cumin seeds – 1 tsp
  • Curry leaves – ½ sprig
  • Green chili – 2 nos

Tempering:

  • Coconut oil – 1 tblsp
  • Mustard seeds – ½ tsp
  • Cumin seeds – ½ tsp
  • Broken red chili – 1 no

Procedure:

  • In a small pressure cooker, add chopped zucchini, washed moong dhal, chopped onion, chopped tomato, turmeric powder and asafetida. Pressure cook it for about 2-3 whistles.
  • Meanwhile grind the grated coconut, cumin seeds, curry leaves and green chilies into a fine paste and keep aside.
  • Once the pressure is released, add the grounded masala and salt to the mixture and cook it for about 2-3 mins.
  • Finally, heat the oil in a pan and add mustard seeds, cumin seeds. Allow it to splutter and add the broken red chili in it and pour the tempering over the kootu.
  • Yummicious “Garden Fresh Zucchini Kootu” is ready to serve.
