Peerkangai thuvaiyal:

Ridge guard Thuvaiyal/ Thogayal is a typical south indian side dish. The texture of the thuvaiyal is coarsely grounded paruppu/ coconut mixture with some interesting elements.

Ingredient:

  • Ridge guard skin – 1 cup
  • Grated coconut – ¼ cup
  • Gingelly oil – 2 tblsp
  • Urad dhal – 1 tblsp
  • Dry red chili – 3-4 nos
  • Salt – as req
  • Garlic – 3 nos
  • Tamarind puree – 1 tsp (thick)

 Procedure:

Step 1:

Wash and peel the skin off from the ridge guard.

In a pan add some gingelly oil, once the oil get hot add urad dhal, dry red chili, garlic, ridge guard skin, coconut and salt. Saute for about 2-3 mins.

Cool completely.

Step 2:

Grind the mixture coarsely along with tamarind puree. The texture should be thick, coarse. Do not add much water.

enjoy with some hot rice, even for idli/ dosai/ chapathi it suits well.
