Mango Shrikhand

Ingredients:

For making sweet yogurt/Dhahi:

  • Organic whole milk – 1 cup
  • Curd culture – 1 tsp
  • Rock candy/kalkandu – 1 tsp

For mango Puree:

  • Riped mango – 1 no
  • Powdered sugar – 2 tblsp

For Shrikhand:

  • Mixed finely chopped nuts – 1 tblsp
  • Cardamom powder – ½ tsp
  • Mango puree – 2-3 tblsp

Procedure:        

For making sweet yogurt:

  • Boil the whole milk along with a tsp of rock candy and cool down to room temperature or when it is warm add a tsp of curd culture and mix well and allow it to set under a warm place for about 6-8 hours (ref pic)

For mango puree:

  • Wash, peel and dice the mangoes and add the 2 tblsp of powdered sugar ;grind it into a fine paste (ref pic)

  • Add the puree into a hot pan and keep stirring to avoid scorching until you achieve the right consistency (ref pic)

For making Shrikhand:

  • Place a mesh strainer over a bowl and pour the sweet yogurt and leave it for about 3-4 hours ( ref pic)

  • You will able to see lot of whey from the yogurt (ref pic)

  • Add the thick sweet yogurt, mango puree, finely sliced/chopped nuts (ref pic) and cardamom powder into a bowl and mix well

  • The super tasty, aromatic, delicious “lord krishna’s favorite delicacy MANGO SHRIKHAND” is ready; Serve Cold
