//Manga Sadam//
Ingredients:
- Diced raw mango – 1 cup
- Cooked rice – 2-3 cups
- red onions – ¼ cup ( roughly chopped)
- garlic – 5-6 cloves
- coriander seeds – 1 tsp
- split channa dhal – 1 tblsp
- urad dhal – 1 tblsp
- byadagi chili – 4 nos
- salt – to taste
Tempering:
- gingelly oil – ¼ cup
- mustard seeds – 1 tsp
- urad dhal – 1 tsp
- split channa dhal – 1 tsp
- cumin seeds – 1 tsp
- asafetida – ¼ tsp
- turmeric powder – ½ tsp
- curry leaves –1 sprig
Procedure:
- heat a tsp of oil in a pan and add the split channa dhal, urad dhal, coriander seeds and dry red chili and cook it for about 2 mins or until golden brown in color (ref pic)
- cool completely and grind it into a coarse powder and add the diced mango, red onion, garlic and grind it semi-coarsely (ref pic)
- heat the remaining oil the same pan and add the mustard seeds, cumin seeds; allow it to splutter and add the split channa dhal, urad dhal and roast it for about 2 mins
- Now add the asafetida, turmeric powder, curry leaves along with the coarsely grounded mixture with required amount of salt
- Saute the mango mixture for about 3-4 mins under medium flame (ref pic)
- The mango thokku/ paste is ready
- Now add the required amount of cooked rice into wide mixing bowl and add required amount of RAW MANGO paste into it; mix gently with light spatula without breaking the rice
- Add a tsp of gingelly oil into the rice (if desire)
- The super tasty, unique and flavorful “RAW MANGO RICE/ MANGAI SADAM” is ready to serve
- Serve with some applam/ vadam
