Ingredients:
- kovakkai –1 cup (finely chopped)
- Onion – 1 no medium (finely chopped)
- Grated coconut – ¼ cup
- Cumin seeds – 1 tsp
- Curry leaves – few
- Green chili – 1 no
- Salt – to taste
Tempering:
- Mustard seeds – ½ tsp
- Cumin seeds – ½ tsp
- Coconut oil – 2 tblsp
Procedure:
- Wash and trim the edges off and chop finely.
- In a pan, heat some coconut oil. Add mustard and cumin seeds, allow it to splutter. Now add chopped onion and saute for a while
- Add the finely chopped kovakkai and add salt to taste.
- Sprinkle some water and cover it with a lid. Cook under medium flame for about 2-3 mins.
- Meanwhile grind the grated coconut, green chili, cumin seeds and curry leaves finely and sprinkle the grounded mixture into the cooked kovakkai and turn off the flame.
- Tasty and delicious “IVY GOURD/KOVAKKAI Poriyal” is ready to serve.
