Bitter gourd Podi Curry

Ingredients:

  • Thinly sliced bitter Gourd – 1 cup
  • Chopped onion – ¼ cup
  • Chopped tomato – ¼ cup
  • Ellu podi -1 tblsp
  • Thengai podi – 1 tblsp
  • Jeerna podi – 1 tsp
  • Tamarind puree – 3 tblsp
  • Salt – to taste
  • Turmeric powder – 1 tsp

Tempering:

  • Mild cooking oil – 2 tblsp
  • Mustard seeds – ½ tsp
  • Cumin seeds – ½ tsp
  • Curry leaves – few

Procedure:

  • In a sauce pan, add the thinly sliced bitter gourd along with some salt, turmeric powder and a tblsp of tamarind puree. Bring it to boil half way through and filter out the water and keep aside.
  • In a heavy bottomed pan, heat 2 tblsp of oil. Add some mustard and cumin seeds, allow it to splutter.
  • Add chopped onion and tomato with some curry leaves. Saute for about 2-3 mins.
  • Add the par boiled bitter gourd along with some salt and tamarind puree and boil it for about 3-4 mins or until the bitter gourd is done completely.

  • Add ellu podi, jeerana podi and thengai podi and toss it gently and cover it with a lid for about 5 mins under very low flame and turn off the heat.
  • Enjoy the bitter free “BITTER GOURD PODI CURRY” with some hot rice.
