Ingredients:
- Thinly sliced bitter Gourd – 1 cup
- Chopped onion – ¼ cup
- Chopped tomato – ¼ cup
- Ellu podi -1 tblsp
- Thengai podi – 1 tblsp
- Jeerna podi – 1 tsp
- Tamarind puree – 3 tblsp
- Salt – to taste
- Turmeric powder – 1 tsp
Tempering:
- Mild cooking oil – 2 tblsp
- Mustard seeds – ½ tsp
- Cumin seeds – ½ tsp
- Curry leaves – few
Procedure:
- In a sauce pan, add the thinly sliced bitter gourd along with some salt, turmeric powder and a tblsp of tamarind puree. Bring it to boil half way through and filter out the water and keep aside.
- In a heavy bottomed pan, heat 2 tblsp of oil. Add some mustard and cumin seeds, allow it to splutter.
- Add chopped onion and tomato with some curry leaves. Saute for about 2-3 mins.
- Add the par boiled bitter gourd along with some salt and tamarind puree and boil it for about 3-4 mins or until the bitter gourd is done completely.
- Add ellu podi, jeerana podi and thengai podi and toss it gently and cover it with a lid for about 5 mins under very low flame and turn off the heat.
- Enjoy the bitter free “BITTER GOURD PODI CURRY” with some hot rice.
