Zucchini/ Seemai Suraikai Kootu:
Ingredients:
- Chopped Zucchini – 4 cups
- Moong dhal – ½ cup
- Chopped onion – 1 (medium)
- Chopped tomato – 1 (medium)
- Turmeric powder – ½ tsp
- Asafetida – ½ tsp
- Salt – to taste
To grind:
- Grated coconut – ¼ cup
- Cumin seeds – 1 tsp
- Curry leaves – ½ sprig
- Green chili – 2 nos
Tempering:
- Coconut oil – 1 tblsp
- Mustard seeds – ½ tsp
- Cumin seeds – ½ tsp
- Broken red chili – 1 no
Procedure:
- In a small pressure cooker, add chopped zucchini, washed moong dhal, chopped onion, chopped tomato, turmeric powder and asafetida. Pressure cook it for about 2-3 whistles.
- Meanwhile grind the grated coconut, cumin seeds, curry leaves and green chilies into a fine paste and keep aside.
- Once the pressure is released, add the grounded masala and salt to the mixture and cook it for about 2-3 mins.
- Finally, heat the oil in a pan and add mustard seeds, cumin seeds. Allow it to splutter and add the broken red chili in it and pour the tempering over the kootu.
- Yummicious “Garden Fresh Zucchini Kootu” is ready to serve.
