Rava Kitchadi

Kitchadi is one of the famous tiffin in our wedding menu, most of the down south-indian wedding menu won’t complete without this. A good combination of rava, veggies. Very tasty, light and fluffy tiffin. For sure your kids will love this. This is one meal where you can incorporate all veggies, ghee and rava. Really a delicious tiffin.

In our country we use SOOJI very often in our regular diet in any form like kesari, upma, kheer, ladoo so on. It is rich in iron, potassium and proteins and it is beneficial to your kidney function.it is good for DIABETICS too and also it improves your heart health. I use to make kitchadi very often. My cutie pie’s favorite food.

Ingredients:

  • Rava –        1 cup
  • Mild cooking oil/ ghee – 3 tblsp
  • Small onion – 5 nos (thinly sliced)
  • Tomato – 1 (medium- optional)
  • Mixed veggies –3/4 cup
  • Roasted peanut – ½ cup
  • Kadalaparuppu / splitted chick pea – 1 tblsp
  • Dry chillies – 2 nos (broken)
  • Curry leaves – 1 sprig
  • Mustard seeds – 1 tsp
  • Cumin seeds – 1 tsp
  • Asafetida – ¼ tsp
  • Turmeric powder – 1/2 tsp
  • Water – 1- 1 ½ cup
  • Salt – as req

Procedure:

Step 1:

In a wide pan dry roast the rava until the nice aroma comes (do not burn) and keep aside.

Step 2:

In a cooking pan add oil, once the oil get hot add mustard and cumin seeds along with kadala paruppu. Let it splutter and add broken red chilies, asafetida, curry leaves, roasted peanut, veggies, and sliced shallots. Sauté it for a while with half a tsp of turmeric powder.

Step 3:

Add water to the mixture with required amount of salt. Bring it to boil, turn the flame low and add the roasted rava slowly and stir constantly to avoid the formation of any lumps.

Step 4:

Now close the pan with the lid and cook it for few more mins in the low flame. Within few mins you will get a fluffy and yummy rava Kitchadi. Serve hot with some favorite chutney.
