Dosai itself amazing then why not Kambu dosai? Pearl millet is so called Kambu. Though idli is the healthiest food in the world, kids always like Dosai. Not only kids most of us like dosai. Instead of making plain dosai I thought of adding some good healthy stuff to it. I found whole pearl millet in our grocery store immediately I got an idea of making kambu idli and dosai.

How to make kambu Idli/ dosa Batter?
Ingredient:
- Par boiled rice – 3 cups
- Pearl millet – 1 cup
- Urad dhal -1cup
- Fenugreek seeds-1 Tblsp
- Salt-as req
Procedure:
Soaking
- soak the washed rice in a separate bowl and dhal with fenugreek seeds in a separate bowl,this will take minimum of 5-6 hrs
Grinding
- First Grind the urad dhal along with fenugreek seeds until the batter gets light and fluffy
- Second grind the rice into two batches(rice and kambu) in order to attain the right consistency
- Once the grinding process is done we have add the salt as req (rock salt is preferable)
- Mix well with your hand (more important). For dosai the batter need not to be too thick.
Fermenting
- Another important process in this idli batter is FERMENTATION. Minimum of 7-8 hrs req for fermenting, the time duration might vary due to climatic conditions.
Ingredient:
Kambu Idli/ dosai batter – 1 cup
Gingelly oil/ Ghee – for greasing
Procedure:
Step 1:
Take a cup of kambu idli/ dosai batter add some water to get the dosai batter consistency
Consistency.
Step 2:
Pour a ladle full of kambu dosai batter over the pre-heated tawa and spread it evenly in clock wise to form a circular shape and add a tsp of ghee/ gingelly oil over and sides of the kambu dosai. Close it with a lid for 2-3 mins and you will get a healthy kambu dosai. Njoy with some hot and spicy chutney.
