AVIYAL:

The most popular vegetarian kerala dish is the best accompaniment for our adai as well as for white rice.

Aviyal is nothing but a combination of vegetables cooked in thick coconut mixture with a spoonful of coconut oil. A very easy and healthy dish recipe are as follows

Ingredients:

  • Mixed vegetables (readymade aviyal mix) –        1cup
  • Grated coconut –        ½ cup
  • Cumin seeds –        1tsp
  • turmeric powder – a pinch
  • Green Chile –        2 no/ as per your spice level
  • Salt           –        as req
  • Coconut oil –        1tblsp
  • Thick Curd –        2tblsp
  • Curry leaves/karuvepillai –        1 sprig
  • Water           –        as req

Procedure:

Step1:

In a sauce pan add the peeled-cut-washed mixed vegetables with a cup of water with a pinch of turmeric powder and bring to boil for few mins

Step 2:

In a small mixie jar add the half cup of grated coconut with a tsp of cumin seeds and green chillies and grind smoothly

Step 3:

Once the vegetables are half way cooked add the coconut paste and salt and let it boil for few more mins

Step 4:

Once the vegetables are boiled add a tblsp of coconut oil and sprig of curry leaves and switch off the flame

Step 5:

Once off the flame before serving add the thick curd and serve
