WHITE VEGETABLE KURMA:
Hotel Style WHITE vegetable kurma/ white kurma, a typical indian side dish for chapathi/ uttappam/ idiyappma/ appam/ poori. This type of kurma we find in most of the hotels only, it’s not that much hard to make at home. Here is the recipe
Ingredient:
- Mixed veggies – 2 cup
- Onion – 1 medium size
- Tomato – 1 medium size
- Ginger garlic paste – 1 tblsp
- Garam masala – 1 tsp
- Grated coconut – 2tblsp
- Fennel seeds – ½ tsp
- Roasted gram – 2 tsp
- Cashews – 2 tsp (OR)
- Green chilies – 2-3 nos(depends on your spice level)
- Cinnamon stick – 1 inch
- Cardamom – 2 nos
- Bay leaves – 2 nos
- Salt – as req
- Water – as req
- Curry leaves – 1 sprig
- Coconut oil – 2tblsp
Procedure:
Step 1:
Grind the grated coconut, green chili, fennel seeds, Cashews, roasted gram and cinnamon stick into a smooth paste and keep aside.
Step 2:
In a pan, add some coconut oil and once the oil get hot add bay leaves and cardamom, then add chopped onions saute for a while.
Add some ginger garlic paste stir constantly to avoid scorching, then add chopped tomatoes, mixed veggies along with some salt and garam masala. Sprinkle some water and give it a mix, allow it cook.
Step 3:
Once everything incorporated well, add the grounded coconut mixture with required amount of water. Cook until the gravy becomes thick (it takes about 5- 8mins) finally add some fresh curry leaves, towards the end add a tsp of coconut oil and turn off the flame.
