VAZHAIPOO-MURUNGAIKEERAI PORIYAL:

About Murungai keerai/drumstick leaves

Ingredient:
- Drumstick leaves – 1 cup
- Cleaned plantain flower – 1 cup
- Gingelly oil – 2 tsp
- Seeragam/cumin seeds – 1 tsp
- Urad dhal – 1 tsp
- Dry red chilli – 2 nos
- Shallots/ small onion – 4 nos (finely sliced)
- Grated coconut – 2 tblsp
- Water – as req
- Salt – as req
Procedure:
Step 1:
Take off the leaves without any strings (as shown in the pic) and wash thoroughly, clean the banana flower (as shown in the pic) and cut it finely and put it in a bowl of water with a tblsp of curd. Soak the flower until cook.
Step 2:
In a medium pan add 2 tsp of gingelly oil, let the oil get hot then add urad dhal and cumin seeds and broken dry chilli, once the cumin seeds get splutter add sliced shallots and saute for a min
Step 3:
Now add the cleaned plantain flowers, let it cook for about 4-5 mins sprinkle a little water to avoid scorching and then add the drumstick leaves and saute until it shrinks. It takes hardly 2-3mins,. Later add salt as per your taste and finally add grated coconut and turn off the flame.
NOTE/TIP:
- Do not add much water to the poriyal, it spoils the flavor
- If you are making more than one cup then sprinkle some more water at the very end before adding the salt and coconut.
- Always add salt to the end stage before adding coconut. This is for all greens, because greens are cook quickly and the quantity becomes small. So add salt as per the quantity to the very end.
