Kathrikkai Kadalai/ Brinjal Peanut Curry

Ingredients:

  • Kathrikkai – 10 nos (small)
  • Boiled peanuts – ½ cup
  • Cooking oil – 2-3 tblsp
  • Plain chili powder – ½ tsp
  • Turmeric powder – ¼ tsp
  • Salt – to taste
  • Water – as req

To grind:

  • Grated coconut – 2 tblsp
  • Curry leaves – few
  • Cumin seeds – ½ tsp
  • Green chili – 2 nos (small)

Procedure:

  • Clean and cut the brinjals and put into water until you cook
  • Heat some oil in pan and add the brinjals along with some salt and saute for a while.
  • Sprinkle some water and cover it with a lid and cook it for about 3-4 mins
  • Now add the boiled peanuts along with turmeric powder, plain chili powder and sprinkle some water to avoid scorching and cook it further.
  • Meanwhile grind grated coconut, green chili, curry leaves and cumin seeds coarsely without adding water (like wet powder) and keep aside.
  • Within 2-3 mins the oil separates by the time add the grounded wet powder and toss it gently and turn off the flame
  • Quiet delicious and tasty “Kathrikkai Kadalai Curry” is ready to serve.
