Ingredients:
- Kathrikkai – 10 nos (small)
- Boiled peanuts – ½ cup
- Cooking oil – 2-3 tblsp
- Plain chili powder – ½ tsp
- Turmeric powder – ¼ tsp
- Salt – to taste
- Water – as req
To grind:
- Grated coconut – 2 tblsp
- Curry leaves – few
- Cumin seeds – ½ tsp
- Green chili – 2 nos (small)
Procedure:
- Clean and cut the brinjals and put into water until you cook
- Heat some oil in pan and add the brinjals along with some salt and saute for a while.
- Sprinkle some water and cover it with a lid and cook it for about 3-4 mins
- Now add the boiled peanuts along with turmeric powder, plain chili powder and sprinkle some water to avoid scorching and cook it further.
- Meanwhile grind grated coconut, green chili, curry leaves and cumin seeds coarsely without adding water (like wet powder) and keep aside.
- Within 2-3 mins the oil separates by the time add the grounded wet powder and toss it gently and turn off the flame
- Quiet delicious and tasty “Kathrikkai Kadalai Curry” is ready to serve.
