Ingredients:
- Cauliflower – 2 cups
- Grated coconut – ½ cup
- Green chili- 2 nos
- Cumin seeds – 1 tsp
- Curry leaves – 1 sprig
- Ginger – 1 inch
- Salt – to taste
Tempering:
- Coconut oil – 1 tblsp
- Cumin seeds – ½ tsp
Procedure:
- Par boil the cauliflower and drain out the water and keep aside
- In a pan, heat some oil and add some cumin seeds. Allow it to splutter and add the par boiled cauliflower into the pan and saute it for about 1-2 mins
- Meanwhile, in a mixie jar add the grated coconut, curry leaves, green chilies, cumin seeds and ginger. Grind it coarsely and add into the cauliflower fry.
- Toss it gently and cover it with a lid for about 3-4 mins
- After that open the lid and toss it on high flame for about a min and serve hot.
- Enjoy the delicious spicy “CAULIFLOWER COCONUT FRY” with some hot rice or with chapathi.
