Cauliflower Coconut fry

Ingredients:

  • Cauliflower – 2 cups
  • Grated coconut – ½ cup
  • Green chili- 2 nos
  • Cumin seeds – 1 tsp
  • Curry leaves – 1 sprig
  • Ginger – 1 inch
  • Salt – to taste

Tempering:

  • Coconut oil – 1 tblsp
  • Cumin seeds – ½ tsp

Procedure:

  • Par boil the cauliflower and drain out the water and keep aside
  • In a pan, heat some oil and add some cumin seeds. Allow it to splutter and add the par boiled cauliflower into the pan and saute it for about 1-2 mins
  • Meanwhile, in a mixie jar add the grated coconut, curry leaves, green chilies, cumin seeds and ginger. Grind it coarsely and add into the cauliflower fry.
  • Toss it gently and cover it with a lid for about 3-4 mins
  • After that open the lid and toss it on high flame for about a min and serve hot.
  • Enjoy the delicious spicy “CAULIFLOWER COCONUT FRY” with some hot rice or with chapathi.
