Parangikai Poriyal

Ingredients:

  • Parangikai/ squash – 2 cups (diced)
  • Grated coconut – ¼ cup
  • Mustard seeds – ½ tsp
  • Cumin seeds – ½ tsp
  • Green chili- 2 nos
  • Coconut oil – 2 tblsp
  • Onion – 1 no (finely chopped)
  • Salt – to taste

Procedure:

  • Clean and dice the squash and keep aside.
  • In a pan, heat some oil. Add mustard and cumin seeds, allow it to splutter. Now add chopped onion with chopped green chilies. Saute for a while
  • Add the diced squash and add salt to taste.
  • Sprinkle some water and cover it with a lid. Cook under low flame for about 3-4 mins.
  • Now add some freshly grated coconut to the poriyal and turn off the flame.
  • Creamy and healthy “Parangikai” poriyal is ready to serve.
